Portabella mushrooms have a great texture and can be a great alternative to meat.
Ingredients
  • Portabella mushrooms
Instructions
  1. Slice portabella mushrooms in 1/2 inch thick sections
  2. Place in a Ziploc plastic bag with chicken broth and seal
  3. Marinate for 2 hours or overnight
  4. Sauté the mushrooms in chicken broth (can use the same chicken broth that used for marinade) for 3-5 minutes on medium heat
  5. Use mushrooms in place of meat in salads, pasta, sandwiches, etc.
