Curried Chana Dal Risotto

This one pot meal is super easy. Just put all the ingredients in a medium pot, add heat, and enjoy!
Ingredients
- 1 cup dry China Daal
- 3/4 cup dry millet
- 1 cup grated carrots
- 1/3 cup raisins
- 1 cup shitake mushrooms
- 1/2 medium onion, diced
- 2 garlic cloves minced
- 2 cups frozen broccoli rabe (or other leafy green like kale or spinach)
- 1 1/2 cups milk or milk substitute (i.e. plain almond or rice milk)
- 2 1/2 cups chicken broth
- 1/4 cup nutritional yeast
- 1/2 tsp salt
- 1 tsp curry
Instructions
- Put all ingredients in a 3-quart soup pot, cover, and bring to a boil
- Reduce heat to low and simmer for 30 minutes
- Stir often
