Foodie Friday: Watermelon Fruit Pizza


I know we featured watermelon salad last week, but it is just so good right now! I stumbled upon this recipe for watermelon fruit pizza, a healthy-ish take on more traditional fruit pizzas that have a cookie crust. This one uses the watermelon as the “crust” and is topped with a creamy yogurt mixture and lots of fresh fruit. This recipe will be a show stopper at your labor day BBQ.

Watermelon Fruit Pizza from Eating Well

Ingredients

1/2 cup low-fat plain yogurt

1 teaspoon honey

1/4 teaspoon vanilla extract

2 large round watermelon slices, about 1 inch thick, cut from the center of the melon

1 cup of mixed berries or other fruit for toppings; strawberries, blackberries, blueberries, kiwi

2 tablespoons torn fresh mint leaves

Directions

  1. Combine yogurt, honey, and vanilla in a bowl.
  2. Spread 1/4 cup of the yogurt mixture over each slice of watermelon.
  3. Top with fruit and mint.
  4. Cut, pizza style, into 8 wedges.
