Nutrition Nuggets Recipe: Lemon & Garlic Tilapia

I’ve been trying to get more fish into our diets – not an easy task for someone who never liked fish! Tilapia is an easy to prepare fish that picks up the flavors of a marinade very well. These flavors combined for a delicious fish dish.


Nutrition Nuggets Recipe: Lemon & Garlic Tilapia

  • 2 tilapia fillets
  • Juice of 1 lemon
  • ½ cup of olive oil
  • 3-4 cloves of garlic, minced or chopped
  • 2 Tbs. chopped parsley
  • 1 Tbs. Dijon mustard
  1. Place tilapia filets in an oven-safe baking pan – large enough so they do not overlap. Mix next 5 ingredients in a small bowl and whisk together. The mustard will act as an emulsifier to bring it all together in a creamy blend. Pour this over the fish and refrigerate 30-60 minutes.
  2. Pre-heat the oven to 425 degrees. Cook for about 10 minutes or until desired doneness – fish should be opaque and flake easily with a fork. Serve with a roasted vegetable, which you can toss with some olive oil, salt & pepper and cook in the same oven at same temp!
